Skillet Chocolate Cake
The recipe this month is a top tier family favorite! This skillet chocolate cake is super simple to put together & melt in your mouth delicious! It's moist, it's chocolatey, it's got yummy, gooey frosting...what more could you ask for?! I'm willing to bet that this will quickly become a highly requested dessert at your home, like it has been in our home!
Ingredients
For the Cake
1 1/4 c. water
1/3 c. cocoa powder
2 sticks butter (16 Tbsp.)
2 1/4 c. flour
1 c. sugar
1 c. brown sugar
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1/2 c. greek yogurt
2 tsp. vanilla
For the Icing
1 stick butter (8 Tbsp.)
8 Tbsp. milk
1/3 c. cocoa
4 c. powdered sugar
1 tsp. vanilla
Directions
For the Cake
Preheat oven to 350 degrees
Step 1
Start by mixing your flour, sugar, brown sugar, baking soda & salt in a stand mixer. Mix that together & set it aside.
Step 2
In a separate bowl mix the 2 eggs, 1/2 c. yogurt & vanilla. Mix until smooth. Add the yogurt mixture into the flour mixture & mix it just until it's mixed togher. Don't overmix.
Step 3
In a pot on the stove, melt the butter & add the water & cocoa. Bring mixture to a simmer.
Step 4
Remove the butter/cocoa mix from the stove. Add the hot cocoa mixture to the stand mixer while the stand mixer is stirring on low speed.
Step 5
Once it is evenly mixed (don't overmix), remove bowl from stand mixer &, with a spatula, make sure everything from the bottom is well incorporated.
Step 6
Pour batter into a 12" skillet & bake at 350 for about 30 minutes. I check mine at 30, I like to leave mine slightly moist in the middle, so a fork comes out mostly clean. This gives it a gooey texture. If you prefer yours fully baked, just keep baking until a fork comes out fully clean.
For the Icing
While the cake is baking, make the frosting.
Step 1
On the stovetop melt the butter & then add the rest of the ingredients. Stir until melted & smooth.
Step 2
Once the cake is out of the oven, pour the frosting on top while still warm. Spoon it out into a bowl & enjoy! It is delicious with vanilla ice-cream!
