Feeding the Farmer
Veggie Quiche
This recipe is a staple at our farmhouse! It's one of those kitchen sink recipes that's perfect to make with you've got veggies to use up, or just need to make something with ingredients you probably already have on hand! Plus, my kids love it & it's really delicious! One of my all time favorite farmhouse dinners! 🙌
Ingredients
12 eggs
1 ½ c. Cottage cheese
1 ½ c. Grated cheddar cheese (or any cheese of choice)
1 lb. Sausage, cooked
3 cups chopped veggies of choice
1 tsp. Salt
1 tsp. Pepper
2 unbaked pie crusts
Directions
Step 1
Sautee veggies for a few minutes on the stove top in some olive oil to soften (UNLESS using spinach or chard, no need to sautee green leafy veggies)
Step 2
Combine all ingredients into a bowl until well mixed.
Step 3
Split filling into 2 unbaked pie crusts.
Step 4
Bake at 350° for 45-60 minutes, or until center is set.
Step 5
Eat one for dinner, & save one for breakfast!
