Wild Game Big Mac
Have you ever gone to Mickey D's instead of grilling the deer you just got back from the butcher? Yeah, that's what we thought... Next time save the trip and try your hand at the Wild Game Big Mac.
Ingredients
For the Patty
2 pounds ground wild game meat ie: Venison / Elk / Moose
2 tbsp minced garlic
1 tbsp Worcestershire
1/4 cup minced onion
1/2 tbsp cracked pepper
1 tsp smoked paprika
1 tsp sea salt
1 tsp garlic powder
For the Special Sauce
1/2 cup mayonnaise
2 tbsp ketchup
2 tbsp sweet pickle relish
2 tsp finely diced onion
1/4 tsp finely minced garlic
1 tsp white vinegar
1/8 tsp kosher salt - or to taste
1/4 tsp smoked paprika
Directions
For the Patty
Step 1
Mix game meat and all other patty ingredients in a large glass bowl.
Step 2
Take a baseball size handful of meat mixture and roll into a ball. On a piece of parchment paper toss ball down, press ball down and follow along the sides with your other hand for a perfect patty. Do this until all patties are formed, then place them in the fridge for 30 minutes before cooking. THIS IS KEY.
Step 3
Preheat grill to high heat.
Step 4
Place the the burgers on the grill and don't touch!!! Once they have cooked for 5 minutes, flip them once...ONCE.
Step 5
When your burgers are almost done, toss the bottom and middle bun on the grill and cheese how you like. If you don't want extra crispy buns, feel free to use a baking sheet.
Step 6
Now we layer.
Bottom cheese bun, special sauce, pickles, onions, lettuce, burger patty, middle cheese bun, special sauce, pickles, onion, lettuce, burger, sauce, and top bun.

Step 1
Mix all ingredients whenever you feel like it.
