Homemade Bacon BLT!!

Aight Guys!! Nothing beats a good ole BLT sandwich! However if you make your own homemade bacon, it makes it even better! Just imagine toasty bread, sriracha mayo, lettuce, tomato, homemade bacon and CANDIED JALAPEÑOS! Talk about a flavor bomb...
Ingredients
Homemade Bacon

1 - Whole Pork Belly Skin Off, cut in half

½ - Cup of Light Brown Sugar

½ - Cup of Dark Brown Sugar

¼ - Cup of Kosher Salt
-
4 - Tbsp of 16 Mesh Cracked Black Pepper

1/8 - Cup of Red Pepper Flakes

2 - Tbsp of Granulated Garlic
-
2 - Tbsp of Curing Salt
BLT Sandwich

Bread - I used Tomato & Herb thick cut bread.

Sriracha Mayo - Basically Mayo and enough sriracha until you get to the het level you want.

Butter Lettuce
-
Sliced Tomato
-
Candied Jalapeños
-
Homemade Bacon

Salt & Pepper to taste
Directions

Mix all dry ingredients in a bowl and mix well.

Take one half of your pork belly and generously cover your pork belly on all sides.

Place pork belly in a ziplock bag and in the fridge. This is an 8 day process, so be patient.

Lay your pork belly on a flat surface in the fridge and you are going to flip your pork belly over each day for 7 days.

After the 7th day, remove your pork belly from the bag and rinse off with fresh water. Dry it off and place on a wire rack uncovered in the fridge for another 24 hours.

After 24 hours, remove your pork belly and place on your smoker at 225-250 degrees until your pork belly reaches 165 internal temperature. Remove from the smoker and let cool completely. Place in a ziplock bag or wrap in Saran Wrap, back in the fridge overnight.

The next day, remove your pork belly from the fridge and slice it up as thin or as thick as you like. Save out enough for you to cook and then vacuum seal the rest into portions that you want and put it in the freezer for later use.

Cook your homemade bacon however you like. I placed mine on a wire rack in the oven at 350 degrees until I got my desired crispiness.

First, take a skillet and toast your bread in some butter.

Time to assemble! I spread sriracha mayo on the bottom bread, then lettuce, tomato (be sure to season your tomato with salt & pepper), as much bacon as you like, CANDIED JALAPEÑOS (cause you know we gotta have em!) and finally a little more sriracha mayo on the top piece of bread. Cap that baby off and time to go in for that bite!
