This is a true classic, simple farmhouse recipe! You can make this year round & it’s the perfect after dinner dessert! The topping ideas are endless and it can be customized to fit the occasion! This is a favorite at the farm.

🍰 Single-Layer Butter Cake (8–9 inch)

Ingredients
• ½ cup (1 stick) unsalted butter, softened
• ¾ cup granulated sugar
• 1 large egg, room temperature
• 1½ tsp vanilla extract
• 1½ cups all-purpose flour
• 1½ tsp baking powder
• ¼ tsp salt
• ½ cup whole milk, room temperature

Instructions
Preheat oven to 350°F (175°C).
Grease an 8- or 9-inch round cake pan. Line bottom with parchment if you’re feeling extra safe.

Cream butter & sugar
Beat butter and sugar together until pale and fluffy, about 2–3 minutes.

Add egg & vanilla
Beat in the egg until smooth, then mix in vanilla.

Mix dry ingredients
In a separate bowl, whisk flour, baking powder, and salt.

Combine
Add dry ingredients to the butter mixture in two additions, alternating with milk.
Start and end with dry ingredients. Mix just until combined — don’t overmix.

Bake
Pour batter into prepared pan and smooth the top.
Bake 28–32 minutes, until lightly golden and a toothpick comes out clean.

Cool
Cool in pan 10 minutes, then turn out onto a rack to cool completely.
