Pear Upside-Down Cake
This cake is so delicious & easy & just tastes like fall! It’s a crowd pleaser & a perfect after dinner dessert for those crisp fall evenings!
Pear Upside-Down Cake
Ingredients
Topping:

3-4 ripe but firm pears, peeled, cored, and sliced

4 Tbsp unsalted butter

½ cup brown sugar (light or dark)

1 tsp vanilla extract
Cake Batter:

1 ½ cups all-purpose flour
-
1 ½ tsp baking powder
-
½ tsp baking soda
-
½ tsp salt
-
1 tsp cinnamon (optional)

½ cup unsalted butter, softened
-
¾ cup granulated sugar
-
2 large eggs
-
1 tsp vanilla extract
-
½ cup sour cream (or Greek yogurt)

¼ cup milk
Instructions

Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.

In a saucepan, melt butter for topping. Stir in brown sugar and vanilla until smooth. Pour into pan and arrange pears on top.

In a medium bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.

In a large bowl, beat butter and sugar until fluffy. Add eggs, vanilla, then sour cream.

Add dry ingredients in two parts, alternating with milk. Mix until just combined.

Pour batter over pears. Bake 40-45 minutes, until golden and toothpick comes out clean.

Cool 10 minutes. Run knife around edge, invert onto plate, peel parchment, and let caramel drizzle over pears.
