Pear Upside-Down Cake

This cake is so delicious & easy & just tastes like fall! It’s a crowd pleaser & a perfect after dinner dessert for those crisp fall evenings!

Pear Upside-Down Cake

Ingredients

Topping:

  • 3-4 ripe but firm pears, peeled, cored, and sliced

  • 4 Tbsp unsalted butter

  • ½ cup brown sugar (light or dark)

  • 1 tsp vanilla extract

Cake Batter:

  • 1 ½ cups all-purpose flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon (optional)

  • ½ cup unsalted butter, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream (or Greek yogurt)

  • ¼ cup milk

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.

  • In a saucepan, melt butter for topping. Stir in brown sugar and vanilla until smooth. Pour into pan and arrange pears on top.

  • In a medium bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.

  • In a large bowl, beat butter and sugar until fluffy. Add eggs, vanilla, then sour cream.

  • Add dry ingredients in two parts, alternating with milk. Mix until just combined.

  • Pour batter over pears. Bake 40-45 minutes, until golden and toothpick comes out clean.

  • Cool 10 minutes. Run knife around edge, invert onto plate, peel parchment, and let caramel drizzle over pears.
